    Healthy Crockpot Chicken Creole

    List of Ingredients




    3 lbs chicken thighs or breasts, skinned
    1 C celery, diced
    1 red pepper, sliced
    1 green pepper, sliced
    1 onion, sliced
    1 can sliced mushrooms
    1 can tomatoes
    1 tsp garlic powder
    3 pkgs sugar substitute
    1 tsp Cajun seasoning
    1/2 tsp. paprika (I used Penzey's Smokey Paprika)
    salt & pepper to taste
    Louisana hot sauce to taste
    2 c Minute Rice,-cooked

    Recipe



    Place chicken in bottom of the crockpot. Combine remaining ingredients (except rice) and add to crockpot. Cook on high 4-5 hours or low 7-8 hours. Cook rice according to package direction. Spoon the Creole mixture over hot cooked rice.

    Originally from kokonut; Review from Carol (Casf): I sprinkled some Emeril's Original Seasoning over the chicken breasts. I also thickend the sauce with a cornstarch slurry. This recipe is a keeper!! Bet it's even better today. Haven't tried it yet.
