    Blueberry Peach Cobbler

    Source of Recipe

    BB

    List of Ingredients

    1/4 cup brown sugar
    1/4 cup white sugar
    1 TB. lemon juice
    1 cup blueberries (I use 1 1/2 c.)*
    2 cups sliced peaches (I use 3 c.)*
    1 TB. cornstarch
    1/2 cup water

    TOPPING:
    1 cup sifted flour
    1/2 cup sugar
1 1/2 tsp. double acting baking powder
    1/2 cup milk
    1/4 cup softened butter/margarine
2 TB. sugar & 1/4 tsp. nutmeg (I use cinnamon)

    Recipe

*Fresh fruit is wonderful but frozen or canned works as well.

Combine sugars and cornstarch in saucepan. Add water; blend well. Cook over medium heat, stirring until thickened. Add lemon juice, peaches and berries. Mix well. Turn into a greased 2 Qt. dish. (when adding extra fruit I use a Pyrex 9x12)

Topping: Mix flour, 1/2 cup sugar and baking powder. Add milk and butter, beat until smooth. Spoon over fruit. Sprinkle with mixture of remaining sugar and nutmeg.

Bake at 350ºF (325ºF in glass) for 1/2 hour or until crust is browned and tests done.

This is also delicious with ice cream when it's warm.
