    Crust:
    1 cup all-purpose flour
    1/2 cup quick-cooking oats
    1/2 cup butter or margarine
    1/4 cup pecans, chopped
    1/4 cup packed brown sugar

    Filling:
    2 cans (15 oz each) pumpkin
    2 cans 12 oz each) evaporated milk
    4 eggs
    1 1/2 cups sugar
    1/2 cup San Juan Spice Rum
    2 tsp ground cinnamon
    1 tsp ground ginger
    1/2 tsp ground cloves
    1 tsp salt

    Topping:
    1/2 packed brown sugar
    1/2 cup chopped pecans
    2 Tbls butter or margarine, softened

    Recipe



    Crust:
    Combine the first 5 ingredients until crumbly: press into a greased 9" x 13" baking pan. Bake at 350ºF for 20 minutes or until golden brown.

    Filling:
    Beat ingredients in a mixing bowl until smooth: pour over crust. Bake for 45 minutes.

    Topping:
    Combine brown sugar, pecans and butter; sprinkle over top of filling. Bake 15-20 minutes longer or until a knife inserted near the center comes out clean. Cool.

    Store in the refrigerator.

    16-20 servings.
