Sweet Dumpling Peach Cobbler

Posted by: starshineeliz: Try Tabbie's cobbler! This is the very best "pour" peach cobbler I have ever had in my life. I double the recipe and make it in a 9x13 glass baking dish. Put a cookie sheet under your pan, since it bubbles up and overflows a little. It is absolutely delicious!!! The crust turns into sweet dumplings...In fact, I think I'm going to rename the thing "Sweet Dumpling Cobbler" ... If you double it, just use 1 1/2 sticks of butter.
List of Ingredients
1 stick butter (8 Tbsps.)
1 cup sugar
3/4 cup self rising flour
3/4 cup milk
1 (28 ozs.) tin sliced peaches in syrup, undrained
Recipe
Preheat oven to 350ºF.
Put butter in deep baking dish and place in oven to melt. Mix sugar and flour,add milk slowly to prevent lumping, pour over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Still do not stir, batter will rise to top during baking. Bake 35-45 minutes. Good with fresh whipped cream or vanilla ice cream. Serves 8-10.
Note: Self-rising flour is all-purpose flour with baking powder and salt added. To substitute all-purpose flour, put 1 1/2 teaspoons baking powder and 1/2 t. salt in a 1 cup measure; spoon in all-purpose flour, and level off with a knife. Substitute this for each cup of self-rising flour. Hope this helps, I use this formula and it works (a tip from a cooking magazine).
