    Diet Soda Cake

    Source of Recipe

    internet

    Recipe Introduction

    Light and Tasty

    List of Ingredients

"For a lighter moist cake, try this trick. Use any flavor cake mix and beat in a 12 oz can of diet soda. Try diet lemon lime soda with white or yellow cake mix and diet cola with a chocolate cake mix. Do not add any other ingredients. Then just pour the batter into a pan and bake as usual. Top each piece with 2 tbls fat free whipped topping instead of icing."

    Recipe

Use Black Cherry soda with the chocolate cake. It makes it soooooo rich.

Use diet vanilla pepsi with the dark mixes and 7-up or sprite with the light mixes.

Another review: I used duncan hines dark chocolate cake mix with diet vanilla coke, beat on high for 2 1/2 minutes and made cupcakes.

    1) The flavor is great. I was thinking it might be too sweet but it wasnt. Flavor got a thumbs up from all 4 of us, including my husband who is very critical of anything fat free or "light".

    2) The consistency is not quite like a normal cake - its moist and soft and is similar to a pudding cake without the gooeyness.

    3) There is a reason the original recipe stated to top with cool whip. That was to hide the fact that these do not rise in a dome shape like a normal cupcake. They rose, but the tops stayed flat. I dusted mine with powdered sugar - the family didnt care - they were just happy I made cake!
    LOL

My tips: Do not over fill your cupcake pan - filling it half way is fine. They do rise and the cups I filled 3/4 went a bit over the top of the pan. When I tried to get them out the top popped off resembling a mushroom. The cups I kept small turned out fine and came right out of the pan. When you remove the pan from the oven, let them cool a few minutes before removing them. They are soft.

    My conclusions:

The family has asked me to make these again and had fun last night coming up with different combos they would like me to try. (and some gross ones a la fear factor they thought were hysterically funny!) In a nutshell

I will make them again especially since the numbers come out to 90 calories, 1.75 gms of fat and 0 cholestorol per cupcake - thats pretty good!
