    ONION-SMOTHERED PORK CHOPS

    6 (1/2 inch) thick pork chops

    1 tbsp oil

    1/2 cup butter, divided

    1 onion, chopped

    1 (10 oz) can cream of onion soup

    3 cups instant brown rice

    Preheat oven to 325. In skillet brown pork chops in oil and simmer 10 minutes. Place chops in shallow baking pan. In same skillet, add half butter and sauté chopped onion. Add onion soup and 1/2 cup water and stir well. Sauce will have pretty light brown color. Cook rice according to pkg directions and add remaining butter to rice. Place chops over rice in sprayed 9x13-inch baking pan. Pour onion-soup mixture over chops. Cover and bake for 40 minutes.

    Serves 6

    SWEET POTATO DELIGHT

    3 cups mashed sweet potatoes

    6 tbsp butter

    2 eggs

    1/4 cup sugar

    1 tsp vanilla

    Topping:

    1/3 cup flour

    1 cup brown sugar

    1 cup chopped nuts

    6 tbsp butter


    Preheat oven to 350. Combine sweet potatoes, butter, eggs sugar and vanilla. Pour into a sprayed 9-inch square baking dish. Combine topping ingredients and spread sweet potato mixture. Bake for 30 minutes.

    Serves 4-6

    BEER MUFFINS

    2 cups biscuit mix

    2 tsp sugar

    2/3 cup beer

    1 egg, slightly beaten


    Preheat oven to 400. Spray 12 muffin cups. Mix biscuit mix and sugar. Add beer and egg. Fill muffin cups two-thirds full. Bake for 15 minutes or until golden brown.

    Serves 4-6
