    SAUSAGE AND WILD RICE

    2 tbsp butter
    1 medium onion, chopped
    1 (4 oz) can mushroom pieces, drained
    1 lb smoked sausage, thinly sliced
    dash poultry seasoning
    1 (6 oz) box long grain wild rice

    Melt butter in large skillet. Add onions and mushrooms and saute until translucent and tender. Add sausage and cook 10-15 minutes. Add a little poultry seasoning. Cook rice according to package directions. When done, stir in sausage mixture and toss.
    Serves 2-4


    ASPARAGUS AMANDINE

    1/4 cup milk
    1 (10 oz) can cream of chicken soup
    3 eggs, hard-boiled, sliced
    1 cup cubed American cheese
    1 (10 oz) pkg frozen cut asparagus, cooked
    1 cup sliced almonds
    1/2 cup breadcrumbs
    2 tbsp butter, melted

    Preheat oven to 350. Combine milk and soup. Stir in eggs, cheese and asparagus. Pour mixture into sprayed baking dish. Cover with almonds and crumbs. Drizzle with butter. Bake for 30-40 minutes or until bubbly and slightly brown on top.
    Serves 4-6
