Asian Cucumber Salad

Prep: 15 min., Chill: 1 hr.
List of Ingredients
3/4 cup seasoned rice vinegar
1/4 cup water
1 tablespoon sugar
1 tablespoon minced garlic
1 tablespoon lite soy sauce (didn’t have lite so I used regular)
1 teaspoon sesame oil
1/2 teaspoon freshly ground pepper
2 large cucumbers, peeled and sliced
2 tablespoons sesame seeds, toasted*Recipe
Stir together first 7 ingredients in a large bowl. Add cucumbers, tossing to coat. Cover and chill 1 hour. Add sesame seeds, and toss; serve immediately.
This was posted by krrispy in December and just got to it last night. I had some teriyaki chicken and wanted something with an Asian flavor to accompany it and had all the ingredients on hand so I made it and glad I did because it is very good. Not too vinegary, not too sweet, just a nice pleasing oriental flavor to it. A keeper as far as I'm concerned.
*The only thing I will change next time is to cut the sesame seeds down to 2 teaspoons because there were way too many floating on top. I’m looking forward to the leftovers tonight. Thanks krrispy for sharing this one. I have copied lot’s of your recipes so we must have similar taste buds. ~Jan~
