BOHEMIAN MEAT LOAF with SOUR CREAM GRAVY

List of Ingredients
1 lb. ground chuck
1/2 lb. ground pork
6 slices white bread
Milk
1 jumbo or two regular eggs
1 small diced onion, or 1 tsp. onion salt
1 tsp salt - use only if using the onion, the onion salt will make it salty enough
Pepper to taste (1/2 tsp is good)
2-3 bacon strips
Recipe
In a mixing bowl tear the bread and soak with milk until "mushy." Add egg & other seasonings. Add meat and mix together. If mixture is too loose, add another piece of torn bread, dry. Form into loaf in a 11 x 13" roasting pan. Put strips of bacon on top. Put alittle water (about 1/2") in pan. Bake at 350ºF for about 1 hour.
SOUR CREAM GRAVY
depending on how much gravy you want - these are the general proportions:
3 T. butter
3 T. flour
3 beef bouillion cubes
1 C. sour cream
Dissolve bouillion cubes in hot water for the amount of gravy you want to make. Add sour cream. (I do this in the blender, don't put the sour cream in boiling water or will denature). Add to roux that you made in another skillet to thicken.

My grandma was the school cook in WWII Czechoslovakia, when she came here, she showed my Mom her meatloaf recipe, which my Italian DH loves. It's very good with sourcream gravy and dumplings. I buy the dumplings in the frozen food section, but this is their recipe...
