DUTCH VEGETABLE SOUP WITH MEATBALLS (Bolletjes Soup)

Beef stock (I use 4 to 5 cups) or (4 to 5 cups of water and 4 to 5 bouillon cubes)
2 onions, chopped
1 potato, medium (diced)
4 stalks of celery, sliced
2 tomatoes, cut-up
1/2 cup rice
4 carrots, diced
1/2 lb. ground beef
1/2 lb. ground veal
1 tsp. salt (adjust the salt to taste since bouillon cubes are very salty)
1/2 tsp. pepper
1 tsp. sweet basil dry (not powder)
1 bay leaf
some nutmeg
Recipe
Cook the vegetables and rice together in the beef stock with the seasonings. When just about done, make small meatballs from the beef and veal which have been mixed together and seasoned with salt, pepper and some nutmeg, cook untill the meatballs are done, remove the bay leaf and serve with a crunchy French bread.
