    Irish Smashed Potatoes

    1/2 C. good quality butter
    3 - 4 T. good horseradish
    8 medium red potatoes, skins on, well-washed, and quartered
    1 quart whole milk
    Freshly ground pepper to taste

    Recipe



    Cook the potatoes in a large pot of boiling water until tender (about 20 minutes). Drain, reserving 1 cup liquid.
    Over low heat, mash potatoes in the pot, gradually mixing in the other ingredients as you do so. This should be a lumpy but well-mixed. Add as much of the reserved cooking liquid as needed to make and keep the mixture moist. Serve immediately.
