    3 half chicken breasts
    2 1/2 cups water
    3 carrots
    2 bell peppers
    4 celery stalks
    1/2 small head cabbage
    1 tablespoon vegetable oil
    3 cloves garlic, minced
    1/2 medium onion, sliced
    1 1/2 tablespoons "lite" soy sauce
    1 package Canton noodles

    Recipe



    Remove skin from chicken breasts, boil in 2 1/2 cups water till done, dice. Save the broth. Cut all the vegetables in strips (about 2" x 1 1/3").

    Heat oil in a wok or big skillet. Add garlic and cook till golden brown. Add onions and keep stirring till onions wilt. Add diced chicken, and season with soy sauce. Let cook for 1 minute. Add vegetables, and stir for 2 minutes.
    Pour in hot chicken broth. As soon as it boils, add the Canton noodles. Stir gently to let the noodles absorb the broth. Season to taste and serve hot.

    Note: Pancit may be seasoned with sliced lemon and soy sauce. Canton noodles are very easy to use and may be found in the Oriental section of big grocery stores.
