    4 oz. raw shrimp, peeled and deveined
    butter, for frying
    4 large eggs
    salt and pepper, to taste
    8 Tbs. whipping cream
    parsley sprigs

    Recipe



    Heat the shrimp gently in a pan with a little butter, just until they turn pink. Divide into 4 well-buttered individual heat-proof dishes. Carefully break eggs over the shrimp, and season with salt and pepper. Spoon the cream over the eggs and cook at 375ºF for 15-25 min. until eggs are just set. Garnish with parsley, and serve immediately with toast or oatcakes. Serves 4
