German Pork In Sour Cream Sauce - Schweinsfilets mit Sauer Sahne

2 pounds boneless pork, cut in 1-inch cubes
2 Tablespoons vegetable oil
1/2 cup chopped onions
1 1/4 teaspoons salt
1/4 teaspoon freshly ground black pepper
1 (8-ounce) can tomato sauce
1/4 cup chopped dill pickle
1 cup sour cream
3 Tablespoons dry sherry

Trim the fat from the pork. Heat the oil in a skillet and brown the pork on all sides. Mix in the onions, salt, and pepper.Cover and cook over low heat heat 20 minutes, stirring frequently. Add the tomato sauce. Re-cover and cook 20 minutes longer or until the pork is tender. Mix in the pickle, sour cream, and sherry; heat but do not let boil. Serves 4-6.
