Fish in 7-Up batter

Coats about 1 pound fish fillets, for 2 servings

1 pound fish fillets
1 cup pancake mix, plus additional for dusting fish
1 egg
8 ounces lemon-line soda
Vegetable oil for deep frying
Recipe
Be sure all bones are removed from the fish fillets. Place fish in plastic food bag and dust with pancake mix; shake to coat. Remove fish and allow coating to dry several minutes.
Preheat deep fryer to 365 degrees.
Combine 1 cup pancake mix and egg. Blend in soda, mixing until batter is thin and blended. Dip coated fillets into batter. Deep fry about 4 minutes or until golden brown. Drain on paper towels. Serve.
