White Chocolate Mousse

1 pkg. (6 squares) BAKER'S Premium White Baking Chocolate
1 1/2 cups whipping cream, divided

MICROWAVE chocolate and 1/4 cup of the cream in large microwaveable bowl on HIGH 2 min. or until white chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted. Cool 20 min. or until at room temperature, stirring occasionally.
BEAT remaining 1-1/4 cups cream in chilled medium bowl with electric mixer on medium speed until soft peaks form. (Do not overbeat.) Add half of the whipped cream to white chocolate mixture; stir with wire whisk until well blended. Gently stir in remaining whipped cream. Spoon evenly into 6 dessert dishes.
REFRIGERATE 2 hours or until ready to serve.
