    Risotto Mix In A Holiday Basket

    2 (1-pint) canning jars with lids
    3-3/4 cups Arborio Rice, divided
    1 cup snipped dried tomatoes, tomatoes
    8 cubes chicken bouillon, broken into small pieces, divided
    4 tablespoons minced onion, divided
    2 teaspoons garlic salt
    2 teaspoons dried oregano
    3 teaspoons dried crushed basil leaves
    1 teaspoon rosemary
    1/2 teaspoon black pepper
    2 tablespoons toasted pine nuts

    In a 1-pint jar, layer 1 cup rice, and half of the tomatoes, bouillon cubes, minced onion, garlic salt, oregano, basil, rosemary, and black pepper. Fill jar with rice and top with 1 tablespoon toasted pine nuts. Cover with lid. Repeat layers in second jar. Makes 2 1-pint jars, or 4 1/2-pint jars.

    Tie red, green, and white ribbons around each jar. Unfold four red, green, and white napkins, and place in basket, draping edges over sides of basket. Add 1 box Alessi breadsticks, a jar of Risotto mix, a bottle of red wine or sparkling grape juice, a small jar of pine nuts, and a wedge of Parmesan cheese.

    Include a recipe card with the Risotto mix recipe and the following instructions: Add contents of jar to 5 cups boiling water. Bring to a boil, reduce heat, cover, and simmer for 20 minutes. Remove from heat and let stand, covered, for about 5 minutes. Rice should be tender, but firm. Stir in 1/2 cup grated Parmesan chese. Garnish with pine nuts and fresh parsley.
