    Source of Recipe

    Desperation Dinners

    Recipe Introduction

Start to finish: 10 minutes preparation, plus 30 minutes refrigeration time. Note: Vanilla-flavored candy coating, such as Candyquik®, is available in the grocery alongside the chocolate morsels. Sometimes called white chocolate candy coating, it is usually sold in one-pound packages, scored in one-ounce squares.

    List of Ingredients

1 large bag (24 ounces) semi-sweet chocolate chips
3 ounces (3 squares) vanilla-flavored candy coating, divided use (see Note)
1 cup Rice Krispies ® cereal
    1 cup miniature marshmallows
    1 cup salted dry-roasted peanuts
Optional toppings: sliced Maraschino cherries, sweetened shredded coconut, M&M's candies

    Recipe

Place the chocolate chips and 2 ounces of the candy coating in a 2-quart or larger microwave-safe bowl. Microwave, uncovered on high, until melted, about 3 minutes, stirring once halfway through. Meanwhile, line 4 (9-inch) paper plates with sheets of waxed paper. Set aside.

Stir the chocolate mixture to blend well. Add the cereal, marshmallows, and peanuts, and stir well. Spoon 1/4 of the chocolate mixture onto each of the wax paper-covered paper plates, spreading the chocolate to within 1/2 inch of the edge of each plate.

Top each chocolate pizza with sliced maraschino cherries, shredded coconut, or M&M's ®, if desired. (If using cherries or M&M's ® you may have to lightly press them into the chocolate to get them to adhere.) Place the remaining 1 ounce of candy coating in a small microwave-safe bowl, and microwave, uncovered on high, until it melts, about 1 minute. Stir well, and then drizzle the candy coating evenly over each pizza.

Chill the pizzas in the refrigerator until hard, about 30 minutes. Peel the wax paper from the back of each pizza, and wrap them. The pizzas keep refrigerated for up to 1 week. To serve, place each pizza on a cutting board, and using a sharp chef's knife, cut into 8 "pizza" slices.

    Makes 4 (8-inch) pizzas for 32 servings
