    The Ultimate Cookie Mix W/ 2 variations

    4 cups shortening
    2 cups sugar
    2 cups brown sugar, packed
    8 1/2 cups flour
    2 cups dry milk
    3 1/2 Tbls baking powder
    2 tsp salt

    Beat shortening, sugar and brown sugar together in a large bowl. Using a heavy duty mixer or pastry blender, add flour, dry milk, baking powder and salt until mixture resembles cornmeal. Store in an airtight container in a cool and dry place. Use within 8 - 12 weeks (this makes 18 cups of mix).

    Recipe #1 to attach to mix:

    Tropical Island Cookies

    2 cups ultimate cookie mix
    1 egg
    1 tbls orange juice
    1 tbls orange zest
    1/3 cup coconut

    Stir together cookie mix, egg, orange juice and zest then add coconut. Drop by teaspoonfuls, 2 inches apart, on an ungreased cookie sheet. Bake at 375 for 10 minutes or until golden. Let cool and drizzle with this icing:

    6 tbls butter, melted
    1 1/2 cup powdered sugar
    6 tsp orange juice

    Blend together until smooth and drizzle over cooled cookies.

    Recipe #2 to attach to mix
    Soft Pineapple Cookies

    3 cups ultimate cookie mix
    8 oz can crushed pineapple
    1/3 sour cream

    Combine ultimate cookie mix with undrained pineapple and sour cream. Drop by spoonfuls, 2 inches apart, on a greased baking sheet. Bake at 350 for 10-11 minutes or until golden. Make 3 1/2 dozen cookies.
