    Originally from a cookbook bought at the grocery store. Most of the fat in the bacon is quickly grilled away. Spinach and/or mushrooms can be substituted for the bacon(or other meat)- just experiment.

    List of Ingredients




    8 (1/2") slices bread (white or wheat)
    8 pieces bacon, sliced
    5 eggs, large
    3/4 cup milk (whole, low-fat, or skim)
    4 slices Swiss cheese (part skim Jarlsberg works well)
    1 tsp. fresh parsley, chopped (optional)
    1/2 tsp salt
    1/2 tsp. black pepper

    Recipe



    Pre-heat the grilling machine for 5 minutes. Add the bacon and close the lid. Grill for 5 minutes.

    Meanwhile, beat together all remaining ingredients except bread and cheese.

    When the bacon is done, remove it from the grilling machine and set aside.

    Dip two of the bread slices in the egg batter. Make sure both sides are well coated, but don't let them soak.
    Place the bread slices in the grilling machine and top each with 2 slices of bacon and 1 slice of cheese. Cover each sandwich with another slice of battered bread. Close the lid and press down so that the sandwiches are flattened. Grill for 3-4 minutes.

    Serves 4.
