Lemon, wine, and honey create the sweet and sour flavor in the simple dish. Add rice and peas to complete the menu.
List of Ingredients
6 skinless, boneless chicken breast halves (4 ounces each)
MARINADE:
2 Tbsp fresh lemon juice
2 Tbsp white wine or reduced-sodium chicken broth
2 Tbsp olive oil, divided
1 clove garlic, minced
1 tsp honey
1 tsp dried oregano
1/8 tsp black pepper
1/8 tsp salt
lemon slices for garnish
fresh oregano for garnish
Recipe
1. To prepare marinade, in a shallow glass dish, combine lemon juice, wine, 1 tbsp of oil, garlic, honey, oregano, pepper, and salt. Mix well.
2. Add chicken to marinade, turning to coat. Cover dish with plastic wrap and refrigerate for 30 minutes.
3. In a large skillet, heat remaining oil over medium-high heat until hot but not smoking. Add chicken to skillet. Discard marinade. Cook, turning once, until cooked through and no longer pink, about 20 minutes.
4. Place chicken on a serving plate. Garnish with lemon and oregano. Serve immediately.
Microwave: Prepare and marinate as directed. Place chicken in a microwave-safe dish. Microwave on High, turning once, until chicken is cooked through and no longer pink, about 8 minutes.
