1-1/2 pounds flank steak or London broil, trimmed
Marinade:
1 c fresh lime juice(about 8 limes)
1 medium red onion, thinly sliced (about 1 c)
1 Tbsp chopped fresh cilantro or parsley(we use parsley)
1/2 tsp salt
1/8 tsp crushed hot red pepper flakes
1 clove garlic, halvedRecipe
1. To prepare marinade, in a shallow glass dish, combine lime juice, onion, cilantro, salt, and red pepper flakes. Mix well.
2. Rub cut sides of garlic over steak. Place steak in marinade; turn to coat. Cover dish with plastic wrap; refrigerate for 2 hours. Preheat broiler. Line broiler pan with foil. Remove steak from marinade. Discard marinade in dish. Place steak on prepared pan.
3. Broil steak for4 to 5 minutes per side for medium, or 6 to 7 minutes per side for well done. Place steak on a carving board or serving platter. Let stand for 10 minutes before cutting across the grain into thin slices.
Variation
Try this marinade with pork chops, too. Use 6 boneless center-cut chops(4 ounces each), 3/4 inch thick, trimmed. Prepare marinade as recipe directs; rub chops with garlic; marinate as driected in Step 2. Broil chops as driected until meat is no longer pink, about 7 minutes per side.
Cook's Tips
A marinade's acidic ingredient-lime or lemon juice, wine, or vinegar-breaks down the meat's connective tissues to tenderize the meat. The longer meat can sit in a marinade, up to 1 day, the better the results. Along with acidic ingredients, marinades usually contain herbs, spices, onions, garlic, and a variety of other flavored-packed seasonings.
