Zesty Broiled Chicken

1 (2-1/2 pound chicken, skinned and quartered
2 Tbsp fresh lemon juice
1-1/2 tsp chopped fresh rosemary or 1/2 tsp dried rosemary
1/8 tsp black pepper
1 clove garlic, crushed
3 Tbsp coarse-grained or Dijon-style mustard

1. Preheat the boiler. Line a broiler pan with foil. Arrange the chicken quarters on prepared pan, bone-side up. Sprinkle with lemon juice, chopped rosemary, pepper, and garlic.
2. Broil chicken 6 inches from heat until lightly browned, about 10 to 15 minutes. Turn the chicken. Broil until lightly browned and juices run clear when chicken is pierced with the tip of a knife, about 15 to 20 minutes.
3. Remove pan from oven; coat the chicken evenly with mustard. Return to broiler and cook until golden brown, about 2 minutes. Place chicken on a serving platter. Garnish with lemon edges and rosemary sprigs.
Prepare in advance: For fuller flavor, marinate chicken ahead of time. Place chicken in a shallow glass dish; sprinkle with lemon juice, rosemary, pepper, and garlic. Cover dish with plastic wrap; refrigerate for up to 6 hours. Proceed as directed in Steps 2 and 3.
