Easy Zucchini Relish

List of Ingredients
2 1/2 cups shredded unpeeled zucchini
1 cup sugar
1 cup water
1/3 cup vinegar
1/4 cup prepared horseradish
1 (3-ounce) package lemon gelatin
Recipe
Combine zucchini, sugar, water, vinegar and horseradish in saucepan. Bring to a boil. Boil for 5 minutes, stirring often. Remove from heat. Add gelatin. Stir until dissolved. Pack in hot, sterilized jars or freezer containers.
*Freeze or refrigerate for up to 2 weeks.*
Serving quantity: Makes 3 cups.
