    Arlene's Baked Corned Beef (T&T)

    List of Ingredients

    As much corned beef as you want to cook
    Coarse ground pepper
    6 onions, sliced
    1 large sheet heavy duty foil

    Recipe

    Place corned beef on foil. Cover with coarse pepper. Put onion slices all over it, using toothpicks where necessary to hold them. Secure foil across top, then sides, leaving air space inside, but so no liquid can leak out. Place in pan at least 2" deep. Bake in 350 degree oven for 3 hours (no matter what size). Boil cabbage and potatoes in pan juices drained from pan.

I trashed the seasoning packet and rinsed the brine off the meat before baking. Made great slices for sandwiches with those cooked onions on top! Used the liquid to cook cabbage, potatoes, carrots and more onions. Excellent!

    Her email comments: okay, now i have to go search to see whose corned beef recipe i used. LOL! i, like you, do not consider myself to be a corned beef fan, but, being irish, i make it once a year. last year in the crockpot where once again it cooked to shreds. well let me tell you, this recipe provides you with slices of corned beef. used the liquid to cook the cabbage, potatoes, carrots, and more onions and it was wonderful! have had it twice since st. patrick's day, when i skimped this year and fixed paula deen's canned corned beef and cabbage which looked like dog food. taste was fine. both corned beefs i have bought at the food lion here... like theirs b/c the seasoning is in a separate pkg and i toss it in the trash. and the winner is.....ARLENE!!!!! lol! i add all six onions and MORE. made great sandwiches last week for lunch with mustard and those onions piled on top the corned beef!!!! guess since i've hunted it down i'll bump it and say excellent! how's that suit ye?

    My review: 3/17/10 OMG!!! It is delish!! I washed the brisket slightly and discarded the seasoning packet. I only added 2 large onions, sliced thickly. There was hardly any shrinkage!! I used the jiuce along with additional water/beef granules to cook my potatoes and cabbage in!! I am having a hard time staying out of that meat!! To die for!!! I've got another brisket in the freezer but I am seriously thinking of getting a couple more!! This is divine!!
