Firefighter's Meatloaf

List of Ingredients

1 cup shredded hash brown potatoes
1/2 cup seasoned bread crumbs
1/2 cup chopped onion
1/4 cup ketchup
2 Tbls. Dijon mustard
1/2 teaspoon dried oregano
salt and pepper to taste
1 large egg, beaten
1 pound lean ground beef
Cooking spray
TOPPING:
1/3 cup ketchup
1 Tbls. brown sugar
1/2 tsp. Worcestershire sauce


Recipe

Preheat oven to 350ºF. Combine potatoes, bread crumbs, onion, ketchup, mustard, oregano, salt and pepper and egg in a large bowl and stir mixture well. Crumble ground beef over potato mixture and stir just until blended. Shape mixture into a loaf. Place in a loaf pan coated with cooking spray. Mix together the topping ingredients and spread over the loaf. Bake @ 350ºF for 45 minutes to 1 hour, until done. Posted by: kate_marie2
