POT ROAST MEAT LOAF

1 lb. lean ground beef
2/3 cup evaporated milk
1/3 cup fine bread crumbs (I use Cheese Nip cracker crumbs)
1/4 cup ketchup
1 teaspoon salt
2 teaspoons Worcestershire sauce
Dash of pepper
3 medium potatoes, peeled and sliced
3 medium onions, sliced
3 medium carrots, sliced
1 teaspoon saltRecipe
Combine all ingredients except the vegetables and second tsp. of salt. Shape into a loaf and place into a greased roasting pan. Places vegetables in layers around meat. Sprinkle with salt.
Cover tightly and bake at 375ºF for 1 hour or until vegetables are tender. Remove foil and bake 10 minutes longer.
I always double the meat loaf ingredients and usually add more Worcestershire sauce.
