Waldorf Astoria Pot Roast

List of Ingredients
3-4 pound pot roast
4-5 medium potaotes cut in half (red potatoes are best)
2 or 3 whole onions, peeled
several celery stalks, cut in 5 inch lengths
several whole small carrots or large carrots cut in 5 inch lengths
Put all in a heavy Dutch oven type pan. Over all sprinkle:
2 tablespoons sugar
2 tablespoons tapioca
1 tablespoon salt
1 cup tomato juiceRecipe
Cover with lid. Put in 250 degree oven. Bake for 5 hours. DO NOT UNCOVER UNTIL 5 HOURS ARE UP. This is good for a busy day. Put in oven at lunch time and dinner is ready 5 hours later. Will hold for longer period if necessary. Enjoy!
