    Lemon Mushroom Pork Chops

    4 to 6 center-cut pork chops
    1 lemon, sliced 1/4 inch thick and seeds removed
    1 can cream of mushroom soup
    1/2 cup minced fresh mushrooms
    1/2 cup dry sherry (NOT cooking sherry) or use white grape juice or apple juice

    Remove visible fat from chops and place in large heavy skillet. Fry and stir until some fat accumulates in pan, about 1 tablespoon. Remove and discard fat pieces. Quickly brown chops on both sides over medium high heat. Remove from heat and place a slice of lemon on each chop. Place remaining slices around chops in pan. Put 1 tablespoon of soup on each chop on the lemon slice. Sprinkle with the minced mushrooms. Stir sherry into remaining soup and mix well. Drizzle evenly over the chops. Cover tightly. Bake at 350° for 1 hour or until fork tender. The gravy is good over rice or mashed potatoes. Even the lemon is delicious.
