    3 large red apples, cored & sliced
    1/2 cup firmly packed brown sugar, divided
    4 tablespoons butter
    3 bunches green onions, trimmed & halved lengthwise
    2 or 3 garlic cloves, minced or crushed
    3 tablespoons red wine vinegar
    Mashed potatoes
    1 or 2 packages smoked sausage, sliced in serving pieces

    Combine apples and 1/4 cup brown sugar in a small bowl and toss to coat. Heat the butter in a skillet, add onions and garlic, stirring, until soft. Add the vinegar and remaining brown sugar. Cook, stirring, until onions are carmelized. Set aside but keep warm.

    Cook sausages on an outdoor grill or oiled stovetop grill pan until browned and cooked through.

    Cook apples in a skillet until browned on both sides and just softened.

    Make your favorite mashed potatoes(or boil potatoes, drain, mash with roasted garlic, salt, pepper, and just enough buttermilk to make a slightly creamy mixture.)

    To serve, scoop mashed potatoes on one side of a plate, prop sausages on side of potatoes, spoon the carmelized onions over the sausages, and top with cooked apples.
