    1 medium onion, chopped
    1 medium green pepper, chopped
    1 stalk celery, chopped
    1 tsp. garlic powder
    1-1/2 tsp. oil
    3/4 to 1 lb. shrimp
    1-1/4 cups water
    1 (8 oz) can stewed tomatoes
    1/4 tsp. salt
    1/4 tsp. pepper
    1-1/2 cups Minute Instant Brown Rice

    Cook and stir vegetables and garlic powder in hot oil in a large skillet until tender, but not brown. Add shrimp, water, tomatoes, salt and pepper; bring to a boil. Stir in rice. Return to boil. Cover, reduce heat and simmer 5 minutes. Remove from heat and stir. Cover and let stand 5 minutes.

    Instead of an 8 oz. can of Stewed tomatoes, I use a regular size can of chopped Italian Style tomatoes. There are so many kinds of chopped canned tomatoes on the market now, that you can change the taste with just one can!
