Hopkins� Boarding House Stewed Okra and Tomatoes

2 pounds fresh okra, washed, trimmed and sliced -or- 3 (10-ounce) packages frozen okra
3 (16-ounce) cans tomatoes, chopped
1 cup chopped onion, or more if desired
1/4 cup bacon drippings
Salt and pepper
Recipe
Combine all ingredients and salt and pepper to taste. Do not saut�. Simmer on top of the stove in a covered saucepan or skillet, or bake in a 350� oven in a tightly covered casserole for 30-45 minutes. Check okra for desired tenderness. Serves 8-10.
