    List of Ingredients




    3 lb. inside round, cut into 1 inch cubes
    2 c. beef broth or stock
    4 large carrots, cut into 1 inch pieces
    4 ribs of celery, cut into 1 inch pieces
    2 med. onions, cut in half, then quartered
    18 sm. new potatoes, left whole, skin on
    2 c. fresh mushrooms, sliced
    2 c. frozen green beans
    1 TBS. granulated garlic
    1 TBS. salt
    1 TBS. pepper
    1 c. frozen green peas, thawed

    Recipe



    Heat a small amount of oil in a roasting pan or Dutch oven. Add beef and cook until just brown. Add broth, garlic, salt and pepper and simmer over low heat until beef is tender. In a separate pot, cover potatoes with water and cook until tender. Add the carrots, celery and onion to beef and cook until almost done. Add potatoes and green beans and heat until the beans are hot. If needed, thicken juices with a browned roux. Add mushrooms. Spoon into bowls and garnish with peas.

    Servings: 6
