    Fresh Tomato-Basil-Garlic Sauce (uncooked) and Pasta

    4 to 5 medium to large tomatoes, diced
    4 cloves garlic, minced
    1/2 cup fresh basil leaves, chopped
    1/2 cup olive oil
    Salt, to taste
    Pepper to taste, optional
    16 ounces pasta of choice
    Parmesan Cheese, freshly grated

    Recipe

    In a non-metallic bowl, combine tomatoes, garlic, basil, olive oil, salt, and pepper, if using. Cover and let sit at room temperature for 2 to 10 hours. Prepare pasta according to package directions. Toss hot pasta with tomato mixture. Top with freshly grated Parmesan cheese. Serve immediately.
