CREAMED CHICKEN (T&T)

List of Ingredients
1/4 cup canola oil
1 onion -- chopped
3 stalks celery, chopped (MY addition)
1/2 cup green peppers (optional) -- chopped (I did not add)
1/4 cup flour
2 cups chicken broth
1 cup milk*
1 Tablespoon parsley
3 cups diced chicken -- more if desired
salt and pepper
Recipe
Saute onion and peppers in oil. Add flour and stir. Add broth, milk and seasonings; stirring to a smooth gravy. Add chicken and parsley.
Serving Ideas : Serve over biscuits, toast or pattie shells.
MY NOTES: I cooked my chicken in the frying pan in a little oil. I seasoned it with S&P and garlic. When almost done, I added the onion & celery. *Instead of milk, I used a can of cream of chicken soup (or you can use crm of mushroom or celery). The next day while heating it up, I thinned it out with some skim milk. I served it over hot cooked rice. VERY GOOD! KEEPER.
