Chicken and Mushroom Skillet

4 boneless chicken breast halves
1 1/2 Tbs butter
a little vegetable oil
2 Tbs flour
1 red onion, chopped
8 oz fresh mushrooms, sliced
1 1/2 cups chicken stock
2 Tbs whole grain mustard
1/2 cup sour cream
3 Tbs chopped fresh parsley
salt and pepper to taste
2 cups cooked rice Recipe
In a large nonstick skillet, melt butter and oil over high heat.
Dredge chicken in flour to coat well, shake off excess.
Saute, turning after about 5 minutes to lightly brown on both sides. Stir in onion and mushrooms. Reduce heat to medium and cook another 5 minutes, stirring well, until onion is golden brown.
Add chicken stock and mustard to pan and stir. Bring to a boil; reduce heat to simmer, cook about 5 minutes. Stir in sour cream and parsley; simmer over low heat for one minute.
Season with salt and pepper and serve over rice.
