Chicken with Almonds and Water Chestnuts

2 Tablespoons oil
1 pound raw chicken, boned and sliced
1/4 cup split almonds
1/4 teaspoon pepper
1 tablespoon water
l/2 cup fresh or canned sliced mushrooms
l/2 cup sliced water chestnuts
2 Tablespoons soy sauce
1 Tablespoon cornstarch
2 Tablespoons waterRecipe
In a wok, heat oil and add chicken, almonds, and pepper; stir-fry until the chicken is browned. Add one tablespoon water, mushrooms, water chestnuts, and soy sauce. Stir-fry. Cover, lower heat and simmer 4 minutes. Combine cornstarch and 2 tablespoons water. Add to chicken mixture. Cook and stir until sauce thickens.
Serves 4. Can be served with rice or chow mein noodles.
