EASY CHICKEN STIR-FRY

1 lb. boneless, skinless chicken breasts, cut into strips
1 t. minced garlic
vegetable oil ofr stir-frying
1 1/4 c water
1 pkg (16 oz) sugar snap stir-fry (Bird's Eye brand suggested)
1/4 c soy sauce
1 T sugar
2 C instant white rice, uncooked (Minute rice)Recipe
Cook & stir chicken and garlic in small amount of oil in large skillet on med-hi heat until chicken is cooked through.
Add water, sugar snap stir fry, soy sauce, & sugar; stir. Bring to a rolling boil. Stir in Minute rice; cover. Remove from heat. Let stand 5 mins.
They cooked this in a covered electric skillet and it worked great.
My notes: this was good but needs "something". I think I'd add some onion slices, more garlic, maybe some sliced celery and at the very end, a splash or two of Sesame Oil...that would just "make" this!!
