    Cabbage Salad using Ramen Noodles

    This version is a main dish salad.

    List of Ingredients




    4 cooked chicken breast halves, diced
    4 Tablespoons sesame seeds, toasted
    4 ounces slivered almonds, toasted
    1 to 2 cabbage heads, shredded
    1 cup green onions, chopped
    2 packages chicken flavored Ramen noodles, uncooked

    Dressing:
    2 packages Ramen noodle seasoning mix
    1 cup vegetable oil
    6 Tablespoons rice or wine vinegar [I use rice vinegar.]
    2 teaspoons salt [I halve.]
    1 teaspoon pepper

    Recipe



    Crush uncooked Ramen noodles and set aside until serving time. Combine the chicken, sesame seeds, almonds, cabbage, and onions, and toss. Combine all dressing ingredients and mix well. Pour over salad and toss. Cover and refrigerate until serving time. Just before serving add crushed Ramen noodles and toss. Serve cold. Yield: 12 servings.

    Note: One of the things I like about this recipe is that it can be made considerably ahead.
