    Minute Rice Classic Fried Rice

    1 Tbs vegetable oil (used olive oil)
    2 cups minute rice (uncooked) [used 1 cup of regular white grain rice, uncooked]
    2 eggs lightly beaten (used 1)
    1 cup of chicken broth (Arlene increased hers to 1-3/4 cups; I used 1-1/2 in mine)
    1 cup of frozen stir fried vegtables, thawed (Arlene used onions and carrots and sauted them before adding to the rice. I did the same.)
    3 Tbs kikkoman soy sauce (used less-1 Tbs during cooking then at the end another splash)
    2 cloves garlic, minced
    onion powder & ginger to taste
    sesame oil, sesame seeds and scallions to taste

    Recipe



    Brown the raw rice in a skillet with the olive oil. Brown for a few minutes (keep an eye out as suddenly they are browned; Stir frequently.) Add the eggs and scramble until cooked.

    Add the broth, veggies and soy sauce to the skillet. Bring to a boil, remove from the heat and allow to stand for 5 minutes. (I simmered mine covered for about 10-13 minutes; Arlene also covered hers during the standing time.)
