    Nickey's Pork Fried Rice

    Recipe Introduction

    I have made this a couple of times. Easy & good!

    List of Ingredients

    Cubed Pork
    6 cloves minced garlic
    olive oil
    onion, chopped
    celery, chopped
    1+ ½ cups cooked rice
    2 eggs, whipped*
    soy sauce


    Recipe

    In WOK or skillet, sauté the garlic in olive oil. Pull the garlic out and save. Sauté onion and celery until tender. Pull this out and save. Sauté the meat until warm (or if raw, until done).

    Add more oil to skillet and fry the rice. Then add the whipped eggs stirring into the rice. Add the veggies and meat to the rice and stir. Add soy sauce to taste.

    You can cook the rice anytime and let it sit until ready to use. Leftover rice is great for this. If I have mushrooms, I sauté and add them also.

    *note from Maggie: since originally posting this I found that if I double the amt of eggs it is even better.
