    BUTTER MINT SALAD

    1 tall can crushed pineapple, undrained
    1 small package lime jello
    10 oz. pkg. miniature marshmallows
    1 1/2 c. cream, whipped OR an 8 oz. bowl Cool Whip
    1 7-oz. pkg Butter Mints, chopped coarsely (I put them in a zipper bag and whack with a rolling pin)

    Recipe



    Mix first three ingredients in large bowl. Cover and let stand overnight in the refrigerator. Whip cream and mix along with chopped mints into the pineapple mixture. Place in a 9x13 pan and freeze. Cut into squares to serve. If you don't want a frozen salad, you can just chill in a bowl. Makes 12-15 servings.
