Bacon and Egg Salad

List of Ingredients
2 large heads romaine or other leaf lettuce or 1 head lettuce and 1 bunch watercress
6 hard cooked eggs, chopped
8 slices (1/2 pound) bacon, crisply fried and crumbled
a few green onions, chopped
salt and pepper
2 Tblsp vinegar
1/2 cup hot bacon fat Recipe
Break up the lettuce in a large salad bowl. Sprinkle eggs and bacon on top of the lettuce. Add green onions. Season with salt (about 1 teaspoon) and pepper. Pour on vinegar and bacon fat. Mix tenderly but well.
Serves 6 to 8.
