Onion and Tomato Salad

This is a great salad that you make ahead and then grill some meat or fish for the main course. It is also a winner at a potluck dinner. Las Cruces Sun-News 6-8-09
List of Ingredients
2 cloves garlic, finely minced
3 tablespoons olive oil
1 tablespoon rice wine vinegar
1 teaspoon fresh dill weed, coarsely chopped
1 tablespoon fresh parsley, coarsely copped
1 teaspoon Dijon-style mustard
2 tablespoons tequila
1/2 teaspoon kosher salt, to taste
1/4 teaspoon ground white pepper, to taste
2 red or white onions, very thinly sliced
4 to 5 medium size, ripe tomatoes, cut into wedges
Recipe
Mix the garlic, olive oil, vinegar, dill, parsley, mustard, tequila, salt and pepper together in the bottom of a wooden salad bowl. Stir in the onion slices and tomato wedges and let stand at room temperature for 1/2 hour before serving.
Lightly toss when ready to serve.
Serves 4 to 6.
