Roast Beef & Potato Salad

2 cups cooked cubed roast beef
2 cups cubed cooked potatoes
1/2 cup chopped green pepper
1/2 cup thinly sliced celery
1/4 cup chopped onion
2 Tbsp chopped pimentos
1/3 cup vegetable oil
2-3 Tbsp vinegar
2 tsp prepared horseradish
1/2 tsp salt
1/8 tsp pepperRecipe
Combine beef, potatoes, green pepper, celery, onion & pimentos. Set aside. Combine oil, vinegar, horseradish, salt & pepper. Mix well & pour over beef mixture, toss to coat. Cover & chill at least 1 hour. Serve on lettuce leaves & sprinkle with parsley.
