Simple Seven-Layer Salad

1 head iceberg lettuce (1 pkg. hearts of romaine)
2 cups fresh or frozen peas (1 [10 oz.] box)
1 onion, thinly sliced
4 hard-boiled eggs, chopped (sliced)
1/2 cup chopped celery (omitted)
1 pound bacon, fried and coarsely chopped (6 slices)
2 cups mayonnaise (1 cup mayo and 1 cup sour cream
1/3 cup sugar
2 cups grated Cheddar cheese (Colby/Jack cheese)
Crumbled cooked bacon for garnish (optional)Recipe
Chop the lettuce into 1-inch pieces. Spread the lettuce over the bottom of a 2-quart casserole dish. The layer the peas, onion, egg, celery, and bacon. In another bowl, mix the mayonnaise and sugar until smooth. Spread on top of the salad to make the seventh layer. Do not stir. Chill for at least 12 hours. Before serving garnish with the cheese and bacon.
Posted by: NavyGrammyTX: here is the basic recipe I used for my layered salad. I think you can put just about anything in it that you want. I've noted in parentheses the things I changed/added.
I also used a layer of baby spinach leaves. I tossed the bacon pieces with 1/2 cup freshly grated parmesan cheese. Although I didn't use them this time, I've also added a layer of sliced water chestnuts at times. Or sliced black olives or mix a couple of tablespoons ofRanch dressing mix in with the mayo and sour cream instead of sugar. That's what's so much fun about this recipe; you can use your imagination.
