1-1/8 Cups sugar (1 cup plus 2 tablespoons)
Water
1 Tablespoon corn syrup
1 Drop lemon juice
1-1/2 Cups cream, warmed
4 Tablespoons unsalted butter
Recipe
Place sugar in a heavy-bottom saucepan and add enough water (about 1/8 cup) to make the consistency of wet sand. Wash down sugar crystals from side of pan with a wet pastry brush. Bring to a boil. Add corn syrup. Boil to a medium caramel color (about 6 minutes). Be careful, mixture is very hot. Carefully stir in cream (mixture may puff up), then butter and drop of lemon juice. Cool and refrigerate.
