    Baked Stuffed Lobster Tails

    Cooking shears come in handy once again! The easiest way to split the lobster tail open is by simply cutting it down the middle with the shears.

    List of Ingredients

    6 (8 ounce) lobster tails
    8 ounces unsalted butter
    2 Tablespoons minced fresh garlic
    1/4 cup chopped parsley
    1/2 cup chopped fresh basil leaf
    1 cup shitake mushrooms, stemmed and wiped clean
    2 or 3 Tablespoons soy sauce soy sauce, or to taste
    3/4 cup hearts of palm, chopped
    1/2 cup plain breadcrumbs

    Recipe

    Using kitchen shears, cut the lobster tail down the center of the back of the shell and remove meat. Cut meat into chunks and reserve shells.

    In a large, non-stick saute pan over medium high heat, melt butter and stir in garlic. Saute a minute or two and add parsley and basil. Now add mushrooms to the pan.

    Add soy and stir in hearts of palm. Add lobster chunks, stir over heat one minute and remove from heat. Sprinkle breadcrumbs lightly onto lobster.
    Fill lobster shell with lobster filling until they are loaded. Place on a baking sheet and bake in a pre-heated 350 degree oven for about 10 - 15 minutes or until done and slightly browned on top.

    Do not over bake!

    Serves 6.
