    Garlic Butter Shrimp

    Overcooked shrimp are tough; therefore, smaller shrimp should be baked for less time. Serve, along with Italian crusty bread, to dip into garlic-butter sauce. Servings: 6

    List of Ingredients

    2 pounds fresh large - extra large shrimp
    1/2 cup butter
    1 teaspoon salt
    6 garlic cloves, crushed
    1/4 cup freshly chopped Italian parsley
    2 teaspoons grated lemon rind
    2 tablespoons freshly squeezed lemon juice
    6 lemon segments [to garnish]

    Recipe

    Preheat oven to 400°F.

    Shell shrimp, leaving tails on; remove veins. Wash shrimp under cold running water; drain onto paper toweling.

    Into a 13 x 9 x 2-inch oven-proof dish, melt butter in oven. Mix salt, garlic and 1 tablespoon of Italian parsley. Arrange shrimp side-by-side in dish.

    Bake into preheated oven, uncovered, for 5 minutes. Turn shrimp.

    Sprinkle with lemon rind, remaining Italian parsley and lemon juice.

    Bake for 8 to 10 minutes, until tender.

    Transfer shrimp into a warm serving dish. Pour in garlic-butter sauce. Serve, garnished with lemon segments.
