    1 Tbsp. olive oil
    2 Tbsp. butter
    8 oz. kielbasa, sliced
    1 cup minced onions
    1 cup diced bell pepper
    1 cup rice, raw
    1/2 tsp. salt
    1/4 tsp. dried thyme
    1/2 tsp. ground black pepper
    1/2 tsp. cayenne pepper
    2 cans chicken broth
    2 cans diced tomatoes, drained
    1 lb. large shrimp, peeled and deveined
    1/2 tsp. tabasco sauce
    4 Tbsp. chopped parsley

    Recipe

    Heat oil and butter in a large skillet over medium heat. Add kielbasa, onion and bell pepper and saute 5 minutes or until vegetables are tender. Add rice, stir until well-coated. Mix in salt, thyme, black pepper and cayenne pepper and cook for 1 more minute until fragrant. Add broth tomatoes, tabasco sauce, and parsley and cook 15-20 mins. covered. During the last 4 minutes of cooking time, add the shrimp.
